Tinder Hearth
A wood-fired bakery and pizza operation in West Brooksville that's been running on organic flours and a wood-fired oven for years. The bread goes out to local markets and restaurants across the peninsula — including Makers' Market in Sargentville — and the pizza nights fill up fast enough that they built a reservation system for Fridays and Saturdays in a barn.
Tinder Hearth is in West Brooksville, on the western edge of the peninsula. The bakery operation is the daily engine: organic flours, wood-fired baking, loaves that circulate through local stores and pop up at Makers' Market in Sargentville on Wednesdays and Saturdays. The bread has a following.
The pizza side runs Friday and Saturday evenings in a heated barn, from 4:30 to 8pm during the winter and spring seasons. Organic flours, local ingredients, a menu that changes weekly. Reservations open Monday at 9am each week for that same week — they don't take advance reservations beyond seven days. Walk-ins are "often possible" during winter months, but calling first is strongly recommended.
Takeout is available: call ahead to claim a slot starting Tuesday of the week you want.
The barn is heated with a large woodstove and electric heaters. Temperature varies by table. They tell you to dress in layers like a good Mainer. No BYOB — the license doesn't cover outside alcohol. No dogs in the barn or yard.
Closed February 15 through March 31. Bread and pastry available for pre-order during March if you reach out during the closure.
